
Roasted meatloaf with roasted potatoes and vegetables

What will I need?
• 1 pack of traditional Czech roasted meatloaf
• 4 potatoes
• 2 larger carrots
• 1 onion
• 2 tablespoons olive oil
• 1 teaspoon rosemary
• 1 teaspoon sweet red pepper
• salt and pepper

Procedure
I come home and I want something solid, but I’m really not in the mood for a long cooking session. I open the fridge, and there’s a roasted meatloaf to save me – it’s ready, I just need to heat it up. Great, I want something simple but tasty to pair with it.
I chop the potatoes and carrots, add the onion in wedges, mix it all with oil and spices and throw it on the baking sheet. The oven runs at 200 °C, so I have half an hour off. Then I just add slices of meatloaf to warm it up, and in a few minutes I can serve.
The result? Crispy potatoes, flavorful vegetables and juicy meatloaf. When I make a yoghurt dip with garlic, I almost feel like I’m in a good restaurant. But mainly – it’s quick, minimum dishes and excellent flavor.
